Hot seasoning from the Creole people of the Mississippi Delta Why black you ask. As it cooks the seasoning turns a deep black colour and forms a crusts that seals in all the juices. My favourites match is fresh chicken wings, generously rubbed with the seasoning and olive oil. Bake on a a rack or an oven tray for 45 minutes at 180 degrees. Crunchy black outside that is full of flavour and the flesh is succulent and white. Remember it is meant to blacken. Once you try this one, it will become a regular part of your menu planning. Also good with chicken drumsticks and thick fillets of skin on barramundi, Mangrove Jack or Snapper.
